Instant Pot Salsa Chicken
- 3 chicken breast (~1.5lbs total)
- Taco seasoning
- 1 cup chicken stock or broth
- 1 can corn (drained)
- 1 can black beans (drained and rinsed)
- 8-12 oz of your favorite brand of jarred salsa
Put chicken on the bottom of insert and sprinkle seasoning on it. Add all other ingredients, saving Salsa for last. Seal Instant Pot (be sure to check your vent nozzle placement) and set on manual for 12 minutes once fin8shed natural release for 2 minutes then quick release. Shred chicken using forks, or whatever your favorite method is. Serve over rice or pasta, in tortillas, or on its own!
BBQ Chicken Pizza
- Pizza Crust (prepared for toppings according to pkg directions)
- 10-12 chicken nuggets (or approx 1.5 chicken breast, cubed and cooked)
- 1/4-1/2 red onion
- 1 8oz pkg of pepper jack cheese (mozzarella also is good if you don’t like the spice)
- 1 bottle of BBQ (We use Kraft Sweet Honey BBQ)
Preheat oven to 400°F. Prepare crust if not already done. Cook chicken breast fully OR microwave nuggests for ~1 minute and cut into smaller pieces. Spread BBQ sauce on pizza crust. Spread chicken and onion around. Top with cheese. Bake for approx 8 minutes or until cheese starts bubbling. Let cool 1-2 minutes. Slice, serve and enjoy.
